Sweet Potato Avocado Toast! Just Put An Egg On It!

Ingredients
  • 1 large sweet potato peeled and sliced ¼ inch to ½ an inch thick
  • Avocado oil spray (can sub olive oil)
  • 4 large eggs
  • Half a red onion sliced thin
  • 1 large avocado
  • Juice of half a lemon
  • 1 large tomato sliced thin then in half
  • Broccoli sprouts for garnish
  • Salt and pepper to taste
Instructions
  1. Pre-heat the oven to 400 degrees. Lay a baking rack over the baking sheet. If you don't have a rack, you can just line with foil. I just like the air to be able to completely circulate to cook more evenly. Set aside.
  2. Lightly spray each of the sweet potato slices on both sides with avocado oil. Place on the rack and sprinkle top with sea salt. Place in the pre-heated oven on the middle rack for 20-25 minutes until the potatoes are just fork tender.
  3. While the potatoes bake, make the avocado mash.
  4. In a small bowl, place the flesh of the avocado in the bowl with the juice of the lemon about ½ tsp. of salt and a few grinds of fresh black pepper. Mash with fork to until your desired consistency. I like a few larger chunks with some smooth. Slice your onion and tomato. Set aside.
  5. Pull the potatoes out of the oven when done and place on your serving dish. Add some of the avocado mash to the tops of the potatoes (your desired amount). Next place some sliced onion and the sliced tomato on top.
  6. Cook your eggs to desired doneness in a medium skillet over medium/low heat, sprayed with more non-stick spray or avocado spray. I did fully cooked sunny side up where the whites are cooked through, but the yolks will still run. About 5 minutes in the pan.
  7. Carefully place each of the cooked eggs on the prepared sweet potatoes. Season the tops of the eggs with salt and pepper. Garnish with a few more sliced onions and topped with the broccoli sprouts.
  8. Dig in!
