Pre-heat oven to 375 degrees. Spray mini-muffin tin with non-stick cooking spray.
Cut the cheese into 12 small ½ inch or so squares. Set aside.
Lightly flour work surface and rolling pin. Open crescent roll dough and gently roll out to press together seems. Do not overwork, dough will get tough.
Using your cookie cutter, cut out 12 rounds in the dough.
Gently press rounds into prepared pan. Pushing evenly up and around sides.
Add about 1 tsp. of apricot preserve to each dough round.
Press a square of cheese down into each round.
Top with torn off pieces of prosciutto to each round.
Bake for 9 to 12 minutes until golden brown and slightly puffed. Remove from oven.
Carefully remove bites from the pan with off-set spatula or knife on to your serving dish.
Drizzle with honey over the bites.
