I don’t know about you, but I am a sucker for anything s’mores. The original s’mores, campfire, stick, bug spray and all. S’mores cupcakes, s’mores tart, s’mores Paris Brest…yes, all delicious shameless plugs! Now, behold your next s’mores obsession, my s’mores popcorn, all the flava’ and none of the bug bites!
I don’t know what genius first put that mallow on a stick over a fire and thought to sandwich it with chocolate between two graham crackers, but I thank them whomever she/he may be! Just something about those flavors and the childhood nostalgia that brings me back in the day when I was young…er..I’m not a kid anymore… 🙂
Any who, you can feel like a kid anytime with this popcorn. It’s really simple, you just mix up your s’mores seasoning mix (makes extra for anytime you have that s’mores hankering), pop some popcorn, on the stove, NO MICROWAVE POPCORN. Can you tell I feel strongly about that? Then mix it all up and drizzle with more chocolate. There you go, like you are sitting out under the stars, around a campfire, with sticky fingers and mouths! No bugs for this version though, sticky fingers and mouth still a hazard!

Celebrate responsibly this weekend, enjoy the warm (hot, hot) weather (socially distant) grill up some food and pop up some popcorn, S’mores Popcorn that is! Leave the fire building for another day (a colder day)!

- Pop the Corn:
- ½ cup popcorn kernels
- 2 tbsp. olive oil
- Ghee spray (can sub melted butter)
- S'mores Seasoning (makes extra):
- 4 tbsp. ground graham cracker crumbs
- 1 tbsp. cocoa powder
- 1 tbsp. granulated sugar
- 1 tsp. smoked sea salt
- S'mores Popcorn Mix:
- ½ tsp. flaky sea salt
- ⅓ cup semi-sweet chocolate chips (you can use more or less if you want)
- ½ cup mini marshmallows (more or less if desired)
- 2 graham cracker sheets broken up into bits (not fine, chunks)
- White chocolate candy coating melts (I used 2 squares of this brand, can use wafers)
- Dark chocolate candy coating melts (I used 2 squares of this brand, can use wafers)
- S'mores Seasoning:
- Mix all the ingredients in a small bowl and set aside.
- Pop the Corn:
- Line a large baking sheet with parchment paper and set aside.
- In a large heavy bottom pot with a lid, add the olive oil to the pot and heat over medium high heat. Pour the kernels in the pot and cover with the lid. Shake occasionally until the kernels start popping. Then shake constantly with the lid cracked a little so steam can escape. Keep shaking until the popping slows and there is more time between each pop. Remove from heat, you don't want to burn.
- In a large bowl add a little of the popcorn and spray with ghee, or drizzle with melted butter. Shake to distribute and add some seasoning mix, I went a tsp. at a time and shake to cover. Then repeat this process until all the popcorn is coated.
- Dump the popcorn on the prepared baking sheet to allow it too cool. Once cooled add the marshmallows, chocolate chips and graham cracker pieces. Mix to combine.
- Melt the white chocolate and dark chocolate candy coating in the microwave in 30 second intervals, until melted and smooth. Next drizzle each over the top of the popcorn. Sprinkle with a little more smoked sea salt and a little flaky sea salt and let the chocolate set. You can even pop it in the fridge for about 5 to 10 minutes to allow the chocolate to set quickly. Store in airtight container at room temp for up to a week.
