First weekend of the 20’s! As promised, all month long I will be sharing healthy recipes you can feel good about and oh so good to eat! Kicking off the weekend of a new decade with a spin on an old favorite. Sweet Potato Avocado “Toast” with an egg on it! The 20’s are looking extra delicious!
I don’t know about you, but I am ready to ditch the sugary desserts, the appetizers and cheeseboards! For a month at least! With all the decadence of the holidays and parties and cookies and wine, Hallmark movies….it really weighs you down! Not just with the extra lbs., but making you sluggish, bloated and just not your best (yes, those movies have that effect on me too ). Well, that’s what January is for, getting back on track and our guts back in tip-top shape with healthy, whole foods.
This weekend I am sharing these easy-peasy sweet potato “toasts”. Everybody loves the old avocado toast, but we are ditching the bread and opting for a complex carb to act as our base instead. If you ask me the roasted sweet potato as the toast is a better version and just a bonus that it’s better for you too. This is a great breakfast, but I would eat for lunch or dinner too. It has everything you need to fuel and fill you up in the best possible way. Healthy fat, complete proteins, fiber and greens. So good. It’s also very customizable, you could even add some smoked salmon to add some omega 3s for that extra boost of healthfulness! It’s a great post workout meal too. Speaking of, my studio is packed this week! I’m not going to worry though, the resolutioners will be off the well, resolutions in another week.
One resolution you will want to keep is eating better with options like this Sweet Potato “Toast”. You’ll never want to order the old version ever again…well maybe not ever again, but not as often!

Let’s get our 20’s on right this weekend and fuel up and fill up on this sweet, sweet (sweet in the sense of good, we used to say that back in the day, the gen Zers probably have some newfangled way to say that. But also, sweet notes of the potato, hence the double sweet ) “toast”.
Happy Weekending and Healthy Eating It!
- 1 large sweet potato peeled and sliced ¼ inch to ½ an inch thick
- Avocado oil spray (can sub olive oil)
- 4 large eggs
- Half a red onion sliced thin
- 1 large avocado
- Juice of half a lemon
- 1 large tomato sliced thin then in half
- Broccoli sprouts for garnish
- Salt and pepper to taste
- Pre-heat the oven to 400 degrees. Lay a baking rack over the baking sheet. If you don't have a rack, you can just line with foil. I just like the air to be able to completely circulate to cook more evenly. Set aside.
- Lightly spray each of the sweet potato slices on both sides with avocado oil. Place on the rack and sprinkle top with sea salt. Place in the pre-heated oven on the middle rack for 20-25 minutes until the potatoes are just fork tender.
- While the potatoes bake, make the avocado mash.
- In a small bowl, place the flesh of the avocado in the bowl with the juice of the lemon about ½ tsp. of salt and a few grinds of fresh black pepper. Mash with fork to until your desired consistency. I like a few larger chunks with some smooth. Slice your onion and tomato. Set aside.
- Pull the potatoes out of the oven when done and place on your serving dish. Add some of the avocado mash to the tops of the potatoes (your desired amount). Next place some sliced onion and the sliced tomato on top.
- Cook your eggs to desired doneness in a medium skillet over medium/low heat, sprayed with more non-stick spray or avocado spray. I did fully cooked sunny side up where the whites are cooked through, but the yolks will still run. About 5 minutes in the pan.
- Carefully place each of the cooked eggs on the prepared sweet potatoes. Season the tops of the eggs with salt and pepper. Garnish with a few more sliced onions and topped with the broccoli sprouts.
- Dig in!
