Week two of January and still going strong! This is one of my favorite homemade pizzas to make. When I am craving pizza and don’t want my typical marinara sauce pizza, this White Pizza fits the bill. For this version it’s completely vegetarian, but you can do so much with the base. I have done shrimp scampi white pizza many times and is delish! Any who, this may look like you are doing something bad, but it is oh so good. You can walk away from the table guilt free!
I don’t know about you, but when I used to belong to gyms, I hated going in January. Now, I just do studio classes. But, January was the worst, all those darn resolutioners! I would go to the gym, go to MY treadmill and low and behold some outsider was in my spot! The good classes were extra crowded and taking up room and the locker rooms were packed. What is up with people just walking around completely naked, not getting dressed or undressed, just hanging out in the buff? Bending over, doing their hair, talking on the phone, without a stich of clothing on! I digress, January gym equals no good. Any who, I don’t have to deal with that anymore and good luck to all you gym goers during this time!
But, we still are on our healthy whole foods, which is a good practice all year long that I usually stick to, along with working out, so keep it up y’all! I love on the weekends, usually a Saturday night, if I am staying in and being low key, to make myself a nice homemade pizza that you can feel good about and really scratches that pizza itch. Something about pizza on the weekends gets me every time. When we were kids, Friday night was always pizza and movie night. We would get home from school, pack up in the mini-van, head to the local VIDEO STORE to pick up the newest VHS just released. Remember, there would be those hooks under the box with tags to let you know it was in stock? It was always so disappointing when the hook was bare under the movie you wanted. Noooo. Next stop, the drug store to pick out our candy, this was always the most time consuming for me. What to choose, what to choose! I remember one, ill-fated night, my mom picked up the candy before we got home from school. Apparently, she picked the wrong candy for my sister, whoa, it was not pretty, needless to say, she is very particular! Anyway, pizza on the weekends is comfort food for me and reminds me of our family tradition. Now, I like to have a cozy night in with my homemade pizza and a glass of wine. Although, #soberjanuary, damn you! 🙂 It’s ok, it’s still delicious with a nice tall glass of water!
Back to this white pizza. Usually white pizzas are laden with cream and cheese, which is delicious, but we are lightening things up. So, you use coconut milk blended with roasted garlic, yum, to get your white sauce! It is so good you won’t miss the dairy at all!
The wheat free pizza crust I used I got from Gluten Free on Shoestring. I have my own wheat free crust I will share that doesn’t require yeast, but I really love this version for my pizza. You would never know it was wheat free! It only requires about 45 minutes of rest for the dough, which is nothing for the weekends. Really this pizza is a breeze to whip up. Roasting the garlic is the longest part and you can go for a quick run while it’s roasting!
Then voilà, you have yourself a delicious, satiating, heart and tummy warming pizza you will make again and again!

- For the Crust:
- Paleo Pizza Crust
- 1 packet of active dry yeast
- 1 cup almond flour
- 1¾ cup Arrowroot Starch - Separated
- 1 egg room temp.
- 1 tbsp. of honey
- ⅓ cup warm water
- 3 tbsp. olive oil
- ½ tsp. of salt
- For the Toppings:
- ½ cup coconut milk (full fat or light)
- 2 heads of garlic
- 3 roma tomatos
- Fresh basil
- 1 small red onion
- 1 to 2 tsp. curshed red pepper
- 1 tsp. dried Italian spices
- Olive oil for brushing
- Salt to sprinkle
- For the sauce:
- Pre-heat oven to 400 degrees. Roast the garlic for 50 to 60 minutes. When cool enough to handle squeeze out cloves into the bowl of a food processor and mix with the coconut milk until smooth and combined. Strain mixture through mesh strainer and cover and place in the fridge until ready to use.
- For the crust:
- In a large bowl add warm water, olive oil and honey. Whisk to combine. Sprinkle yeast on top and let rest for about 5 minutes until foamy. Next add egg and salt, whisk together.
- Add arrowroot starch to a medium bowl and set aside.
- Measure out 1 cup of almond flour and set aside.
- Add 1½ cups of the arrowroot starch to the wet ingredients and whisk until a smooth sticky batter forms. Switch to a wooden spoon or spatula and mix in the almond flour, then stir in the rest of the arrowroot starch.
- Dust your hands with some arrowroot starch and press the dough into a ball and gently knead to get any flour bits.
- Place the dough back into the bowl and cover and set in a warm place for 45 minutes. The kitchen counter works for me. After the dough has rested, it will have grown in size, but not doubled.
- For the pizza:
- Pre-heat oven to 425 degrees and place pizza stone or pan in the oven while it heats up.
- Place a sheet of parchment paper on the counter and transfer dough to parchment.
- Press dough out with your hands, pushing out from center to create about 12 inch round. You can also place a second sheet of parchment paper on top and gently roll dough out to about ¼ inch think or to your liking.
- Brush dough with olive oil and sprinkle with salt.
- Remove hot stone from oven and carefully transfer parchment paper with dough onto the stone and return to the oven. Bake for 7 to 8 minutes until just starting to turn golden.
- While the crust is par-baking, slice your roma tomatoes, basil and onion thin (as much or as little as you like). Reserve some fresh basil for when the pizza is done to sprinkle on top.
- Remove from oven and place the white sauce, seasoning, red pepper flakes and toppings on crust.
- Return to the oven for an additional 12-15 minutes. If desired, broil an addition 3 to 5 minutes. Watch carefully if you broil, can burn easily.
- Dig in!
