Place all ingredients in a small sauce pan and whisk to combine. Heat over low heat to simmer for 25 to 30 minutes. Stir occasionally. Heat until slightly reduced and thickened. Pour into heat proof jar or container and allow to cool to room temp. Store in air-tight container in the fridge. Will last about as long as maple syrup. So a long time.
For the Martini:
Crush the gingersnaps or gingerbread men cookies in a zip-lock bag until you have crumbs. Set aside.
On a small plate pour a little ginger syrup or maple syrup on the plate. Dip the rims of your martini glasses in the syrup. Pour your ginger crumbs on to another small plate and dip the prepared rims of the glasses into the cookie crumbs until the rim is coated. Set aside.
Pour the vodka, coconut milk and gingerbread syrup into a cocktail shaker. Add ice, shake and pour into garnished martini glasses.
