This dairy free, wheat free and vegitarian white pizza will have you at first bite! The creamy, white base, combined with fresh delicious toppings will statisfy even the biggest pizza connoisseurs!

Ingredients
  • For the Crust:
  • Paleo Pizza Crust
  • 1 packet of active dry yeast
  • 1 cup almond flour
  • 1¾ cup Arrowroot Starch - Separated
  • 1 egg room temp.
  • 1 tbsp. of honey
  • ⅓ cup warm water
  • 3 tbsp. olive oil
  • ½ tsp. of salt
  • For the Toppings:
  • ½ cup coconut milk (full fat or light)
  • 2 heads of garlic
  • 3 roma tomatos
  • Fresh basil
  • 1 small red onion
  • 1 to 2 tsp. curshed red pepper
  • 1 tsp. dried Italian spices
  • Olive oil for brushing
  • Salt to sprinkle
Instructions
  1. For the sauce:
  2. Pre-heat oven to 400 degrees. Roast the garlic for 50 to 60 minutes. When cool enough to handle squeeze out cloves into the bowl of a food processor and mix with the coconut milk until smooth and combined. Strain mixture through mesh strainer and cover and place in the fridge until ready to use.
  3. For the crust:
  4. In a large bowl add warm water, olive oil and honey. Whisk to combine. Sprinkle yeast on top and let rest for about 5 minutes until foamy. Next add egg and salt, whisk together.
  5. Add arrowroot starch to a medium bowl and set aside.
  6. Measure out 1 cup of almond flour and set aside.
  7. Add 1½ cups of the arrowroot starch to the wet ingredients and whisk until a smooth sticky batter forms. Switch to a wooden spoon or spatula and mix in the almond flour, then stir in the rest of the arrowroot starch.
  8. Dust your hands with some arrowroot starch and press the dough into a ball and gently knead to get any flour bits.
  9. Place the dough back into the bowl and cover and set in a warm place for 45 minutes. The kitchen counter works for me. After the dough has rested, it will have grown in size, but not doubled.
  10. For the pizza:
  11. Pre-heat oven to 425 degrees and place pizza stone or pan in the oven while it heats up.
  12. Place a sheet of parchment paper on the counter and transfer dough to parchment.
  13. Press dough out with your hands, pushing out from center to create about 12 inch round. You can also place a second sheet of parchment paper on top and gently roll dough out to about ¼ inch think or to your liking.
  14. Brush dough with olive oil and sprinkle with salt.
  15. Remove hot stone from oven and carefully transfer parchment paper with dough onto the stone and return to the oven. Bake for 7 to 8 minutes until just starting to turn golden.
  16. While the crust is par-baking, slice your roma tomatoes, basil and onion thin (as much or as little as you like). Reserve some fresh basil for when the pizza is done to sprinkle on top.
  17. Remove from oven and place the white sauce, seasoning, red pepper flakes and toppings on crust.
  18. Return to the oven for an additional 12-15 minutes. If desired, broil an addition 3 to 5 minutes. Watch carefully if you broil, can burn easily.
